Lemon Ice pops with condensed milk( Helados de limón)




I don't know for you but for me this is perfect:
A lemon Ice pop with condensed milk, taste like Lemon pie:)
For any time, any season...

Ingredients


2 cups of milk
1 can regular condensed milk
1/2 cup fresh lemon juice 
a little bit of lemon pulp

Method

In a medium bowl add milk, condensed milk, lemon juice and lemon pulp.
Mix well into a whisk.
Pour into popsicle molds and freese for at least 4 hours.
I prefer overnight.
To unmold dip the popsicle molds in running water or leave out for a few minutes.

Helados de limón con leche condensada









Acá muos dirán helados?? Bueno en primer lugar me he dado cuenta que en Chile la gente come helados TODO el año.
Siempre estan comprando helados en el Super. Y cuando sale el sol tambien.:)
Quería compartir esta receta porque son deliciosos y mejores que cualquier helado que se compra.
A mi hija le encantan.
Y a mi tambien!
Se pueden comer como postre o como snack.
Es como comer helados con sabor a pie de limon!
Y a los niños les encantan!!




Ingredientes

2 tazas de leche
1 tarro de leche condensada
1/2 taza de jugo de limón
un poco de pulpa de limón.

Preparación

En un bol mediano colocar la leche condensada, leche, jugo de limón, pulpade limon, mezclar todo bien con un batidor de mano.
Repartir la mezcla en los moldes de helado (el otro dia vi que en el Lider estaban vendiendo unos bien buenos) tambien se pueden usar vasos plasticos o envases pequeños de yogurt.
Congelar y dejar al menos 4 horas o toda la noche.
Al otro día pasar los moldes por un poco de agua tibia para desmoldar fácil o dejarlos afuera un rato antes de servir.

Raspberry and chocolate Tart (tarta de chocolate y frambuesas)



I made this tart some time ago to my son and daugther's birthday, they always want something with chocolate for this day. 
I love this Jamie's recipe because raspberry & chocolate goes well!

Ingredients


200 grams all purpose flour
30 grams cocoa powder
25g icing sugar
175 grams of butter
cold and diced
1 egg yolk
1 teaspoon vanilla extract
300 g fresh or frozen raspberries

Chocolate filling
500 ml of cream
Brown sugar 75g
300 grams of solid chocolate into pieces (70% cocoa)
2 eggs, beaten


Method

  Crust
  In a bowl sift flour with the cocoa powder and powdered sugar.

Add the butter and a pinch of salt, mix by hand or machine until it has the texture of breadcrumbs.

Add the egg yolk, vanilla extract and 2 tablespoons cold water until a dough mixture.
Moving to a floured surface and knead with your hands. Wrap in plastic and chill in the refrigerator for 20 minutes.
Preheat oven to 180 ° c
On a floured surface roll the dough into a circle of 25 cm and 4 mm thick.

Carefully lift the dough and cover a springform mold of 23 cm. Put in  the mold pressing the corners.
Prick the bottom with a fork and chill in the refrigerator again about 20 minutes.

Remove the pan from the refrigerator and bake for about 15 minutes, cover with parchment paper  and place a weight on top as chickpeas.
Remove the parchment paper and bake another 5 minutes.

Let cool.

Filling


In a saucepan place the sugar and cream and bring to medium heat. 
Put the pieces of chocolate in a bowl and then add  the hot cream mixture .
 With a wooden spoon stir until thoroughly mixed chocolate. Then add the beaten eggs and mix well.
Spread the raspberries over the cake and then 
 and cover with  the chocolate cream. Bring to oven for 15 minutes. until firm .
Cool and serve with a few raspberries.

Mango and passion fruit semifreddo with Berries and Pomegranate seeds (postre semifreddo con mango y berries)





This dessert is nice for every season, summer or medium winter (like here). 

You can use whatever berries you can get for the garnish,I love the touch of toasted hazelnuts!
If you don't have a loaf tin use other container  pour the mixture in popsicle moulds and freeze.
Just delicious.

Ingredients

1 egg
2 egg yolks
1/2 cup granulated sugar
300 ml cream
2 mangoes peeled or frozen mangoes
1/2 cup passion fruit paste ( or 1 passion fruit)
juice 1 lemon

Garnish

3/4 cup hazelnuts toasted  in oven for 10 minutes
Handful berries (fresh or frozen)
(raspberries, strawberries or others)
seeds from 1 pomegranate (optative)



Method

Line a standard loaf tin with plastic wrap allowing some of the wrap to over hang the sides.

Half fill a medium sized saucepan with water and set over simmering water.

Place egg,egg yolks and sugar in a meidum bowl and whisk using a hand whisk until thick and creamy.

Place the bowl over the saucepan of simmering water and continue whisk for another 4-5 minutes or until mixture grows thick and creamy and double volume.
Remove from heat and set aside.

In a blender put the mango flesh and whizz until smooth, add the passion fruit and whizz again.
Add lemon juice and blitz everything together to combine.
Pour into the thickened egg  yolk mixture.
In other bowl place the cream and whisk beat until just thickened. Add half to the egg mizture and gently fold until just combined. Add the remaining cream and fold everything together.
Pour into the lined loaf pan and cover the top with the overhanging wrap.

Put in the freezer for overnight .

Remove from freezer unwrap from plastic and turn out onto a serving plate.

Garnish with berries, grind toasted nuts and pomegrante seeds.

Cut in slices and serve.

Blueberry & Peach gratin (Postre de arándanos y duraznos en conserva)




This dessert of peaches and blueberries  is absolutely light and delicious.

For those who are in summer you can use fresh peaches but I used  1 can sliced peaches.
You know we are in winter!
This dessert is adapted from Better Homes & garden
Enjoy!










Ingredients

6 gingersnaps crushed (or other cookies)
2 cups peeled and chopped fresh peaches
or 1 can sliced peaches. 
1 1/2 cups blueberries frozen or fresh
1 1/2  cup greek yogurt
2 tablespoons honey
2 teaspoons lemon juice
1/4 cup powdered sugar (optional)



Method

Preheat broiler.
(or preheat oven low heat)
Butter six ramekins or creme brulee dishes, set aside.

Divide crushed gingersnaps evenly among prepared ramekins.Top gingersnaps with peaches and blueberries.

In a small bowl combine greek yogurt, honey and lemon juice.
Spread mixture evenly over fruit in ramekins.
Place dishes or ramekins in a shallow baking pan 
Heat about 8 to 9 minutes or until blueberries begin to burst.
If desired dust with powdered sugar.


You can serve warm or cold.

Postres de arándanos y duraznos en conserva













Creo que a muchos les pasa, uno puede cocinar e incluso acumular unas recetas pero el tiempo para publicarlas es escaso.
Más cuando tengo que esperar que desocupen el computador (aqui tambien estan en vacaiones de invierno y Gerardito ve hasta películas!) OMY
Les digo esto porque estoy tratando de hacer la traducción al español apenas publico la receta.
Ayer era tardísimo en caso no se olviden que el traductor es bueno para ver las recetas.

Vamos al grano.
Este postre es delicioso y se puede hacer en todas las épocas.
Es simple y delicioso.
Es una mezcla de arándanos y duraznos y he ocupado duraznos en conserva y ha quedado estupendo pero tambien se puede hacer en verano con duraznos frescos.

Ingredientes

6 a 8 galletas molidas (you usé de champaña desmigadas a mano)
2 tazas de duraznos picados o en trozos de tarro o frescos
1 1/2 taza de arándanos frescos o congelados ( arándanos congelados se encuentran todo el año en los supermercados y son muy buenos)
1 1/2 taza de yogurt griego sin sabor
2 cucharadas de miel
2 cucharaditas de jugo de limón
1/4 taza de azúcar para espolvorear al servir

Preparación

Precalentar el grill (o el horno bien bajo) porque es por un rato.
Enmantequillar 6 pocillos de cerámica o greda, los que tengan.
Repartir las galletas molidas en el fondo de los pocillos o ramekins.
(molidas a mano deben quedar como migosas)
A continuación colocar los duraznos en trozos sobre las galletas molidas. Luego los arnándanos.
En  un bol mediano, colocar el yogurt, la miel y el jugo de limón, mezclar bien.
Esparcir esta mezclasobre la fruta que esta en los pocillos.
Llevar a horno sobre una bandeja de horno.
Si es en grill deben ser de 8 a 9 minutos.
Si es horno bajo/mediano unos 12 minutos.
Se puede servir con azúcar flor espolvoreada.
Tibio o frio es igual de rico.

Pomegranate & Greek yogurt panacotta




This season I made a lot of treats or desserts with pomegranate!
I love them and now I frozen  someones to make desserts or others in any time:)
I think pomegranates are really georgeous!
I love this dessert: Greek yogurt panacotta & pom syrup!

Ingredients

250  whole milk
400 g greek yogurt
150 ml double cream
1/2 orange finely grated zest
3 teaspoons powder gelatine
(or 5 gelatine leaves)
3 tablespoons sugar

Pomegranate syrup

150 ml pomegranate juice ( can use canned juice )
3 tablespoons caster sugar
1 teaspoon cornstarch
1/2 orange the juice
Pomegranate seeds to serve

Method

Put the gelatine powder in a cup with warm water and soak by a while.
In a pan over a low heat, warm the milk, yogurt, cream, orange zest and sugar stirring constantly.
Don't allow to boil. Once hot, remove from the heat.
Add the soaked gelatine to the pan and stir to dissolve. Once fully dissolved, pour the mix into 6.8 jelly moulds or ramekins. Cover with plastic wrap and place in the fridge to set for at least 5 hours or overnight.

To make the pomegranate syrup:

Place all the ingredients except the pomegranate seeds into a non reactive pan and bring to the boil. Simmer until reduced by half to three quarters and look thick.

You need leave time for the syrup to cool.
To unmold the desserts pour 3 cm. of hot water into a wide shallow bowl.

Dip the panacotta moulds briefly into the water (about 5 seconds). And turn out to serving plates, drizzle with a spoonful of the cooled syrup and some pomegranate seeds.

Panacotta de yogurt griego y jarabe de granadas












La panacotta es uno de mis postres preferidos y la que se hace en casa no tiene nada que ver con las que venden envasadas.
He hecho varias panacottas pero esta con la salsa de granadas me fascinó apenas la vi.
No los aburro diciendoles que me costó un mundo poder conseguir la receta. Hay sitios que son muy complicados pero finalmente lo hice.
Primero quiero decir que se puede hacer con jugo de granadas de botellas o de lata.
He visto en el Jumbo y en el Líder.
Yo tuve la suerte de encontrar algunas granadas en el Líder y a lo mejor encuentran.
Traje varias porque aparte de hacer el postre congelé semillas para hacer otras cosas más adelante.
Para congelar se abren con cuidado y se sacan las "pepitas" se ponen en un tupper plástico y se congelan.
Quedan estupendas.

Ingredientes

250 ml de leche entera  
400 g de yogurt griego
150 ml de crema espesa
1/2 naranja la ralladura
3 cucharadas de azúcar
3 cucharaditas de gelatina en polvo
(de la que viene en cajas)

Jarabe de granada

150 ml de jugo de granada (puede ser de caja o lata)
Si son naturales lo hago así:
Parto las granadas por la mitad y las exprimo en el mismo que exprimo las naranjas y paso el jugo por un colador.
3 cucharadas de azúcar en polvo
1 cucharadita maicena
1/2 naranja (el jugo)
algunas semillas de granada para adornar

Nota: Una vez hice este postre con una salsa de frutillas, queda muy rico tambien.

Preparación

En una taza colocar la gelatina en polvo con agua tibia, mezclar y dejar remojar un rato.
Mientras en una olla mediana a fuego bajo, calentar la lech, el yogurt, la crema, la ralladura de naranja y el azúcar.
Revolviendo siempre la mezcla.
No debe hervir. Una vez caliente retirar del fuego.
Agregar la gelatina ya disuelta y revolver bien para mezclar.
Una vez que está lista repartir en moldes de jalea o pocillos de cerámica.
Cubrir con plástico y llevar al refrigerador, por lo menos 5 horas o toda la noche.

Para hacer el jarabe de granada
En una ollita colocar todos los ingredientes  (excepto las semillas de granada) y calentar revolviendo siempre para que se vaya espesando y se disuelva bien la maicena. Hervir a fuego bajo hasta que se reduzca. Y esté como una salsa espesa.
Dejar enfriar bien antes de servir sobre las panacottas.
Para desmoldar poner los moldes en un poco de agua caliente por unos 5 segundos y con cuidado pasar un cuchillo por la orilla.
Dar vuelta en platos para servir con lasalsa de granada.

Strawberry semifreddo with black sesame (Semifreddo de frutillas y leche condensada)

Ingredients

450 grams fresh or frozen strawberries

1/2 cup of sugar
1 tablespoon white wine vinegar
2 tablespoons black sesame seeds
2 cups heavy cream
pinch of salt
2/3 cup sweetened condensed milk
1/2 cup whole milk greek yogurt


Method


Cook strawberries and sugar in a medium pot over medium heat stirring occasionally until strawberries have broken down into a thick, chunky jam (they should not be syrupy)
10 minutes. Stir in vinegar and let cool.

Meanwhile toast black sesame seeds in a dry small skillet over medium heat until fragant, about two minutes.
Let cool.
Whip cream and salt until cream holds a medium stiff peak.
Gently whisk in sweetened condensed milk and yogurt until completely blended.Gently fold in half of strawberry jam, just enough to create streaks, then gently fold in remaining jam (mixture should look marbled with pockets of jam),
Transfer to a medium bowl or loaf pan and freeze until firm at least 4 hours and up to 3 days.
Serve semifreddo topped with toasted sesame seeds.

Postre semifreddo con frutillas y semillas de sésamo 













Este postre es siempre un agrado. El semifreddo es una especie de casatta helada. Delicioso y no complicado para hacer.
Nos encantó esta receta de Bon appetit!

Ingredientes
450 gramos de frutillas frescas o congeladas (usé congeladas)
1/2taza de azúcar
2 tazas de crema para batir
1 cucharada de vinagre blanco
2 cucharadas sésamo negro (puede ser natural y se tuesta)
1 pizca de sal
2/3 taza de leche condensada 
1/2 taza de yogurt griego

Preparación

En una olla mediana cocinar las frutillas y el azúcar a fuego medio, revolviendo de vez en cuando.hasta que las frutillas se vean como una mermelada espesa, (no debe estar muy líquida)
Esto debería ser de 10 a 12 minutos.
Agregar el vinagre, revolver y dejar enfriar.
Mientras tanto tostar las semilla de sésamo negro o natural en un pequeño sartén por unos 2 minutos hasta que despida ese olor a tostado.Dejar enfriar.

Batir la crema hasta que esté espesa y y bien batida.
Suavemente con una cuchara de madera agregar la leche condensada y el yogurt hasta tener todo unido en una textura cremosa.
Agregar de a poco la mitad de la mezcla de frutillas dejando un marmoleado como se ve en la foto.
Finalmente agregar el resto de la mezcla.
Traspasar a un molde alargado y congelar al menos 4 horas antes de servir.
Para servir el postre agregar unas semillas de sésamo.
Congelar de nuevo lo que quede.

Greek yogurt and Honey blueberry muffins (Muffins de arándanos con miel)






Some days ago I made these muffins with blueberries and honey, but they were forgetting me among many things we always do.

They are healthy and delicious because have  whole wheat, honey and berries, which can be fresh or frozen, everything depends on whether you live in the North or in  South Hemisphere :)

Ingredients


1 1/2cups whole wheat flour
1 cup all purpose flour
 1/2 cup + 3 tablespoons brown sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 cup low fat  greek yogurt
1/2 cup milk
1/2 cup honey
1 teaspoon vanilla extract
2 large eggs room temperature
1/2 cup  vegetable oil ( corn oil)
1 cup blueberries (fresh or frozen)



Method

Preheat oven to 180°C (375° F)
Line a 12 cups muffins tin with paper liners.
Set aside.
In a largte bowl whisk together  flours, sugar, baking powder,baking soda, salt and cinnamon.

In a medium bowl whisk greek yogurt, eggs,vanilla, honey and corn oil.
Gently fold the yogurt mixture into the flour mixture and using a spatula, fold until combined being sure to mix just until the flour dissapears. Add the blueberries.

Divide the batter evenly among the prepared muffins, place pan in the oven and bake for 20 minutes, reduce the heat and bake for 8 minutes more until they look golden and dry.

Allow the muffins to cool for 6 minutes in the pan before transfer to a rack to cool completely.

Muffins con arándanos, miel y yogurt griego


Ingredientes
1 1/2 taza harina integral
1 taza de harina normal (sin polvos de hornear)
1/2 taza más 3 cucharadas de azúcar rubia
1 cucharada de polvos de hornear
1/2 cucharadita de bicarbonato
1/2 cucharadita de sal
1/2 cucharadita de canela
1 taza de yogurt griego o natural
1/2 taza de leche
1/2 taza de miel
1 cucharadita extracto de vainilla
2 huevos grandes temperatura ambiente
1/2 taza de aceite natural
1 taza de arándanos (frescos o congelados)
